Naan khatai ... Traditional cookies..


Ingredients:

2 cups all purpose flour,
2 tablespoon semolina,
1/2 teaspoon baking soda,
1/2 teaspoon baking powder,
2/3 cup granulated sugar,
2/3 cup ghee, two tablespooon extra if needed.

1teaspoon ground cardamom,

1 tablespoon poppy seeds,
1 egg for glaze.

Directions:

Sift flour , baking soda, baking powder , ground cardamom and sieve it twice.
Now beat ghee with sugar and then add flour in it and mix well at time it will look like bread crumbs then  make a soft dough by hand.  Make cookie with your hand and press little in center with your thumb and glaze each cookie with egg wash and then sprinkle some poppy seeds or you can sprinkle roasted almonds and pistachio and bake for 12 to 15 minutes until it gets golden colour ...

Homemade cream cheese ...


Well I had been looking for a long time for cream cheese recipe but I did not satisfied with anyone and quite some time back I have found this recipe and did minor changes and it came out well , so here I am going to share this recipe with all of you....

Ingredients:

Full fat milk 1 litre ,
Vinegar 3 tablespoon ,
5 tablespoon Yogurt (in thick consistency) ,
Ice cubes few,
Muslin cloth or cheese cloth.

Directions:

Boil milk and when it comes to boil keep low flame and and add vinegar and stir then milk gets curdle when all milk got curdled then take from stove and add ice cubes and leave it for few seconds. Now line the strainer with muslin cloth and put curdle milk in it and take off all whey from milk now blend this curdle milk with yogurt until smooth then again line strainer with double muslin cloth and put this smooth cream cheese in it and cover it and refrigerate it for over night. Now your creamy cream cheese is ready...
Note: if your cream cheese looks too thick while blending with yogurt then add more yogurt and blend well.

Molten lava cup cakes...


Ingredients:

175 gm  chocolate
1/2 cup flour,
3 eggs ,
100 gm butter,
1/2 cup sugar.

Directions:

Beat butter with sugar until fluffy set aside, then melt chocolate and add eggs one at a time and beat well until incorporated. Now mix butter batter with chocolate batter and beat well then finally add sifted flour in batter and mix until all incorporated. Grease cake pans and line with paper cups and spray paper cups  with oil then pour batter and bake for 10 to 15 minutes and take them out and invert in serving plates and enjoy....


Note: sides of cup cakes are firm but centre will be wobbly.

Zinger burger...

For buns recipe you have to look at other post in this blog...:)

Ingredients for zinger chicken:

1/2 kg chicken breast pieces,
Salt as per taste,
2 teaspoon White pepper,
1 tablespoon vinegar,
1 teaspoon ginger crushed,
1 teaspoon paprika powder,
Oil for frying.

For coating chicken:

1/2 kg All purpose flour,
1 teaspoon salt,
1 teaspoon white pepper,
1 teaspoon baking powder,
Chilled water.

Directions:
Marinate chicken with ingredients and leave it for at least 3 to 4 hours then mix all coating ingredients with flour and sift well. Now take each chicken breast piece and fold in flour and pressed by your hands in flour then dip in chilled water for few seconds and then again dip in flour and pressed chicken by your hand like we pressed qoftas to get a ball...
Then fry them on low flame until it got golden colour.....

Burger buns ...

Ingredients :

2 cups flour,
1 teaspoon yeast,
1 egg,
2 teaspoon sugar,
1 teaspoon salt,
1 tablespoon oil,
40 gm butter,
1/4 cup milk ,
Water for mixing,
1 egg for glaze,
1 tablespoon sesame seeds.

Directions:

Add yeast, sugar, salt,  in flour and sieve then add egg, milk, oil and mix all dough with water as per need. Leave it for 20 minutes, then knead the dough for ten minutes by rolling and folding then add butter and again knead for ten minutes more by rolling and folding until it become like soft and smooth look. Now make a ball of the dough and leave it for an hour and spray some water over it. After that take out the dough and flap it by your hand and make equal quantity portions  , now take each one and first roll and then make a round buns of each. Line a baking tray and put all buns in the tray and spray some water and leave it for 30 to 40 minutes until it got rise now glaze with egg wash and sprinkle some sesame seeds and bake for 15 to 20 minutes or until it becomes golden.....

Fererro rocher cup cakes...

Ingredients:

1 -1/3 cup flour,
1 cup sugar,
1/3 cup coco powder,
1 teaspoon baking powder,
1/2 cup mayonnaise,
3/4 cup water,
1 teaspoon baking soda,
1 teaspoon vanilla essence.

Ingredients for frosting:

100 gm dark chocolate ,
100 gm white chocolate,
100 gm whipped cream.

Directions:

Sift flour, coco powder, baking powder, and baking soda that they are mixed well. Now add sugar in mayonnaise and beat well that all are incorporated. Then add vanilla and mix again, now add 1/3 flour with mayonnaise batter and mix until all incorporate then add 1/2 water and mix well , in this manner add remaining flour and water in total 3 batches and mix well that all are incorporated. Now preheat oven and bake cup cakes for 15 to 20 minutes and then leave for being at room temperature.

Directions for frosting:

Cut out the chocolates and boil cream then add in cutted chocolate and mix well now leave it for hours to be  reach  the desire consistency.... Now frost the cup cakes and decorate with fererro rocher chocolate....

Chocolate cake with cream frosting and lace collor

Ingredients:

2 cup flour,
2 eggs,
2 cup granulated sugar,
1/2 cup oil,

2 teaspoon baking powder,

1 cup buttermilk,

3/4 cup Luke warm water
1/3 cup coco powder,
1 teaspoon vanilla essence,
Pinch salt.

For  frosting:
600 ml fresh cream,
4 tablespoon icing sugar.

Chocolate lace collar:

100 gm chocolate,
Piping bag,
Parchment paper.

Directions:

Sift all dry ingredients and set aside then beat eggs with sugar until foamy then add vanilla, oil and buttermilk and again beat well until all incorporated. Now mix dry ingredients with wet ingredients with spatula and fold gently until all mix well. Now add hot strong coffee and mix with spatula until all combined . Grease cake pan and bake the batter at 160 degree for 35 to 40 minutes or until tooth pick comes out clean. Now invert cake on wire rack and let it cool completely.

Directions for frosting:

Whipped cream until stiff peaks foam than add icing sugar and again whipped .

Assembling the cake:

Cut cake into four layers than frost each layer with fresh cream and then frost all cake with cream.

For chocolate lace collar:

Put chocolate in piping bag than microwave it until it gets melt than pipe as your desired design on parchment paper and than wrap it around the cake and freeze for 10 minutes after that pull off the parchment paper from the cake and your chocolate lace collar is ready....

Chocolate fudge car cake


Ingredients:

1-3/4 cup flour,
2 eggs,
2 cup granulated sugar,
1/2 cup oil,

2 teaspoon baking powder,

1 cup buttermilk,

1/2 teaspoon baking soda,

1cup hot strong brewed coffee,
1/3 cup coco powder,
1 teaspoon vanilla essence,
Pinch salt.

For ganache frosting:

150 gm dark chocolate,
100 ml fresh cream.

Directions:

Sift all dry ingredients and set aside then beat eggs with sugar until foamy then add vanilla, oil and buttermilk and again beat well until all incorporated. Now mix dry ingredients with wet ingredients with spatula and fold gently until all mix well. Now add hot strong coffee and mix with spatula until all combined . Grease cake pan and bake the batter at 160 degree for 35 to 40 minutes or until tooth pick comes out clean. Now invert cake on wire rack and let it cool completely.

Directions for frosting:

Cut chocolate in pieces and put in a bowl on double boiler and add cream in it and continuously stir and when it gets completely melt then remove from boiler and let it completely cool  you can leave it for an hour to make spreadable. And when it get spreading consistency layered cake with frosting and then wrap in fondant...

For carving cake:

Cut cake in horizontal four lines than make center two lines half cut . Now put 2 center half cut pieces on cake board and than side pieces on top of center pieces than make tier with cookie cutter circle shape now frost the cake than tier and wrap in fondant....

Marshmallow Fondant


Ingredients:

100 mini marshmallows,
2 tablespoon water,
1 teaspoon corn syrup,
2 teaspoon vanilla essence,
1 teaspoon lemon juice,
8 cups icing sugar.

Directions:

Grease a bowl with oil and pour water and marshmallows in it and microwave it until it gets melt stir during microwave with grease spatula. Now add lemon juice , corn syrup, and vanilla essence and mix with grease spatula then slowly add icing sugar one cup at a time and knead it by hand  until it becomes like a dough. Then make ball of whole fondant and plastic wrap it and put in an air tight container and keep it overnight, and then use. If you want to add colour then use food colour and add in fondant and knead well with hand while all colour added though. Now use as required.

Chocolate fudge Brownie

Ingredients:

1-1/2 cup flour,
2 eggs,
1-1/3 cup sugar,

1/2 cup co copowder, 
150 gm butter,
1 teaspoon vanilla essence,
1 cup butter milk,
1/3 cup boiling water,
1-1/2 teaspoon baking powder,
Pinch salt.

Ingredients for brownie frosting:

3 tablespoon coco powder,
100 gm butter,
2 teaspoon fresh cream,
2  cup icing sugar,
1 teaspoon vanilla essence,

1 pack chocolate chip.

Directions:

Sift all dry ingredients three times and set aside. Beat butter until fluffy then add sugar, and egg and beat well until all incorporated. Now add vanilla,  butter milk and again beat . Now mix dry ingredients with egg batter with spatula until all mixed well. Now add boiling water and mix , then grease square cake pan and line with parchment paper and bake for 35 to 40 minutes or until tooth pick comes out clean.

Directions for frosting:

Beat butter until light and fluffy then add icing sugar and again beat now add co co powder ,vanilla and cream and beat until spreadable consistency achieved . Add more cream or icing sugar if required. Now frost brownie then sprinkle some chocolate chips on it.

Coffee crunch cake

Ingredients:

1/3 cup flour,
4 eggs,
1 teaspoon baking powder,
1 teaspoon vanilla essence,
3/4 cup sugar,
1 teaspoon instant coffee granules.

Ingredients for coffee crunch topping:

1/4 cup strong brewed coffee
1 1/2 cups sugar
1/4 cup light corn syrup
1 tbsp baking soda

Direction for topping:

Place the coffee, sugar, and corn syrup in a large saucepan. Heat over medium-low heat until all the sugar is dissolved. When the mixture begins to boil and turn clear, increase the heat to medium-high, cooking until it reaches 290°F.

Remove the pan from the heat and stir in the baking soda; it will foam up.
Pour onto the parchment lined baking sheet and let it cool (at least 1 hour).
Place the candy into a freezer bag and roll over it with a rolling pin to crush it into small pieces. Keep in an airtight container until ready to use.

Directions for cake:

Sift flour, baking powder and set aside, now beat egg yolks with 1/2 amount of sugar , coffee granules and Vanilla until volumes will be doubled an light in colour. Now beat egg whites until foamy then add remaining sugar and beat well until stiff peeks foams. Now add egg whites with egg yolk batter and fold with spatula then add flour in it and mix well. Now grease cake pan and bake for 25 to 30 minutes or until tooth pick comes out clean..
Now let cake completely cool .

Directions for whipped cream frosting:

Beat fresh cream until soft peeks foams then add icing sugar and Again beat well and frost cake with cream and decorate with coffee crunch topping.....

Double Chocolate fudge cake

Ingredients:

1-1/3 cup flour,
2 eggs,
1-1/3 cup granulated sugar,
1/3 cup oil,

1 teaspoon baking powder,

3/4 cup buttermilk,

1/2 teaspoon baking soda,

Oven fresh stuffed buns

Ingredients:

3 cups flour,
11 gm instant yeast,
1 egg,
2 tablespoon sugar,
2 tablespoon oil,
1 teaspoon salt,
1/2 cup lukewarm milk,
Water for mixing,

1 eggfor glaze.



For filling:

Qeema cooked with chicken tikka Masala or your desired flavor, pizza sauce.



Directions:

Mix all dough ingredients and leave for an hour. After and hour knead it with your hand until it become like rubber add more flour if desired. Now shape all of them and filled with pizza sauce and then with qeema or your desired filling. Now again leave it for 35 to 40 minutes. And then glaze with egg wash and sprinkle some sea same seeds and bake for 15 minutes or until it becomes golden.

Rainbow cake

Ingredients:

1-3/4 cup flour,
2 eggs,
2 teaspoon baking powder,
1 cup milk,
1/4 cup lukewarm water,
1/2 cup oil,
1-3/4 cup sugar,
1 teaspoon vanilla essence,
Food color red, green, orange, yellow.

Ingredients for frosting:

Cream 400 ml,
Icing sugar 3 tablespoon.

Directions for frosting:

Beat cream and add icing sugar until whipped.

Directions:

Sift flour , baking powder and set aside, beat eggs and sugar and vanilla until fluffy. Add oil , milk and water and again beat well until all ingredients get incorporated. Now mix egg batter with flour with rubber spatula. Now distribute this batter in four bowls with same quantity and mix food color in all of them separately. And bake separate all batters one by one or if u have space in oven then back twice at one time. After baking bring sponges to room temperature. And now layered the sponges and spread cream one by one then top with more cream .

For gravity defying cake look:

After layering the cake ,coat first with cream and then cut in center of cake and put straw in it and then again coat with cream and it will disappear the gap between the cake with cream , now coat straw with melted chocolate and put bunties on it and it will get attached to straw. Now finally u have to attached smarties packet on top of straw And it will give gravity defying look....

Black forest cake




Ingredients:

1/3 cup flour,
4 eggs,
1/2 cup sugar,
1 teaspoon baking powder,
1 teaspoon vanilla essence.

For frosting:

250 ml whipped cream,
Pineapple chunks and syrup half tin,
Chocolate and cherries for decoration.

Directions:

Sift flour, baking powder and set aside. Beat egg yolks until foamy then add 3/4 amount of sugar and vanilla essence and beat well until it becomes double in volume then beat egg whites and when it gets foamy add 1/3 amount of sugar and beat until soft peeks form. Now mix egg yolk batter with egg whites and mix well until all well corporate. Now add flour in it and mix with rubber spatula. Pour the batter in a grease pan  and bake for 20 to 25 minutes.

For frosting:

Beat the cream until stiff peaks form, than Cut  the cake in to two layers and brush some pineapple syrup on it then spread cream layer and pineapple chunks and again spread cream on top of cake. Now decorate with crushed chocolate , cherries and pineapple.

Chocolate muffins with white chocolate frosting


Ingredients:

1-1/2 cups all purpose flour,
2 eggs,

100 gm butter,
1 teaspoon baking powder,
1/2 teaspoon baking soda,
1-1/3 cup granulated sugar,

1/3 cup cocopowder,

1 teaspoon vanilla essence,

1/3 cup chocolate chips,
3/4 cup butter milk,
1/3 cup lukewarm water.

For frosting:

100 gm white chocolate,
3 tablespoon whipped cream,

1tablespoon butter.

Directions:

Sift flour, coco powder, baking powder, baking soda , salt and set aside, then beat butter until fluffy then add sugar and eggs and mix well until all gets incorporated. Now add vanilla, butter milk, and water in egg batter gradually while mixing. Then mix dry ingredients with wet ingredients in three batches and mix with spatula. Now finally add chocolate chips and mix well.

 Remember lumpy batter will perfect for muffins.  Preheat oven for 10-15 minutea and bake for 15 to 20 minutes.

Directions for frosting:

Chopped chocolate and put chocolate and butter in bowl under simmering water means at double boiler after it gets melt remove from heat and after cool add cream and beat well until it gets desired consistency.

Chocolate ganache recipe



Ingredients:

100 ml creme,
200 gm chocolate.


Directions:

Boil cream and chopped chocolate now add hot cream in chopped chocolate and stir after it becomes cool whipped ganache and use.

Pizza Bread

Ingredients:

For Dough:

500 gm flour,
11 gm yeast,
1 egg,
2 tablespoon sugar,
1 teaspoon salt,
3 tablespoon oil,

20 gm butter,
10oz lukewarm milk for mixing.

For filling:

Chicken tikka boti ,
Cheese,
Pizza sauce,
Vegetables that you want.

Directions:

Mix all dough ingredients and make dough and leave it for an hour. After that shape each bread and filled with chicken tikka boti then veggies and then spread cheese and make bread ( pics has been attached below)  and then again leave for 30 minutes then glaze with egg wash and bake for 15 to 20 minutes until upper side becomes golden. Always open fan mode on while baking.

Vanilla cup cake


Ingredients:

1-1/2 cup flour,
1-1/3 cup sugar,
1-1/2 teaspoon baking powder,
1 teaspoon vanilla essence,
1/2 cup oil,
2 tablespoon butter,
3/4 cup milk,
1/3 cup lukewarm water,
2 eggs.


Directions:

Sift all dry ingredients and in another bowl whisk eggs than add sugar, vanilla and milk and beat well until all incorporated then add oil, and water and again beat now mix with dry ingredients with rubber spatula then add melted butter and again mix, now grease cupcake tin and lined with cupcake paper and fill 3/4 cups and bake for 15 to 20 minutes.

Chocolate Fudge pastries









Ingredients:

1-1/2 cup flour,
2 eggs,
1/2 cup oil,
1/2 cup coco powder,
1-1/2 teaspoon baking powder,
1-1/2 cup sugar,
1/2 cup butter milk,
1 teaspoon vanilla essence,
1/3 cup warm water,
pinch salt.



Frosting:

 1/3 cup coco powder, 1 teaspoon vanilla essence, 3 cups icing sugar, 1/2 cup butter, 1 tablespoon milk or cream.

Directions for frosting:


 beat butter with icing sugar and than add vanilla , coco powder and beat well add milk or cream to reached at your desired consistency. After cake comes at room temperature cut in two slices spread icing and again iced at top of cake and decorate with cream or anything you want.



Directions:

Sift all dry ingredients like flour, coco powder, salt , baking powder, in another bowl whisk eggs and then add sugar and beat well until incorporated now add vanilla , butter milk, oil, and water and again beat well now slowly add egg batter in sifted flour and mix with spatula until all mix well. Grease square cake pan and put batter in it and bake for 35 to 40 minutes or until tooth pick comes out clean.

German cookies that melts in your mouth

Ingredients:


1 cup flour,
100 gm butter,
1 teaspoon vanilla essence,
1/3 cup corn flour,
3 to 4 tablespoon milk,
3/4 cup icing sugar,
1/2 teaspoon baking powder.


Directions:


Beat butter until it becomes fluffy than add sugar, in another bowl sift flour, corn flour and baking powder. Now add flour in butter mixture and mix well after that make designs with piping bag and bake for 15 to 20 minutes.

Braided Bread


Ingredients:

 

2-3/4 cups flour,
 11gm yeast,
 1 egg,
1 teaspoon salt,
 4 tablespoon sugar,
 3 tablespoon butter or oil,
lukewarm milk for mixing.                                         


  Directions:

 Mix all ingredients and make a dough and leave it for an hour for rise. After an hour knead the dough until it becomes like rubber and shape with braid and put in lined baking tray and again leave it for one and half hour for rise, now glaze with egg wash and sprinkled some sesame seeds and bake for 10 to 15 minutes. After baking brush some butter on each braided bread for looks more tempting.
