Chewy fudge brownie


 Chewy fudge brownie 

So here is the recipe of the most chewy fudge brownie..  this is the addictive recipe that once you made  it always going to make it. This is the fool proof recipe which I’ve found after a lot of trying n trying because on internet you can’t find a good recipe with accurate measurements and ends up with the mess. It has the chewy and goey chocolate taste in it with a perfect hint of sweetness for a brownie lover. 

TIP of the day :  Always use all ingredients at room temperature for the better result in any kind of baking.


Ingredients:

1-1/3 cups All purpose flour,

1 cup brown sugar,

1/2 cup granulated sugar,

3 eggs,

1 cup melted butter/ oil

1/3 cup buttermilk,

200gm chocolate,

3/4 cup coco powder,

Pinch a salt


Directions

Cream butter and sugar ( both) together until well combined. Now add eggs one at a time and whisk again for about good 5-7 minutes, then add buttermilk in it and mix well. Sift flour, salt, coco powder together and pour it in egg batter and mix it with spatula. Cut chocolate into small pieces and mix it with the brownie batter. Pour the batter in a greased brownie pan and bake it for 25-30 minutes. 

And tadaaaa. here is your chewy fudge brownie is ready....  Let it sit to cool at room temperature before cutting

Moist Chocolate fudge cake

This is my favorite chocolate cake ever..    And my family's favorite too. This cake i have been baked since years and it is moist and delicious ever ...

Ingredients:

2 cups all purpose flour,
2 large eggs,
1 cup oil ,
1-1/4 cup butter milk ,
1 cup hot brewed coffee,
3/4 cup co co powder,
2 cups sugar,
1 teaspoon vanilla essence,
2 teaspoon baking powder,
1 teaspoon baking soda.

Directions:

Sift all dry ingredients together, in an other bowl add eggs , sugar and oil and beat well until all incorporated then add butter milk in it and again mix well. Now mix flour to egg batter in two batches until all well mixed with spatula. Now add hot coffee in the cake batter and mix with rubber spatula until all mix well but don't over mix at this point. Grease 9" cake pan and bake for 45 to 50 minutes or until skewer comes out clean...

For chocolate ganache:

400 ml fresh heavy cream 
400 gm cooking chocolate.

Melt chocolate under simmering water than add cream in it and mix for once , now leave it for an hour to room temperature but stir in between .

Frost the cake with ganache .

For frosting the cake I have used this ganache and for piping I had beat this ganache when it stiff peaks form then I have pipe on it that's why piping ganache is light in colour...

Sugar Free Marrie Delight

This is the recipe which you can make for those people who are diet conscious or for those who want to eat desert but with no sugar.... and you can make this desert with sugar too by adding icing sugar instead of candrel powder with remain ingrediants...




Ingrediants :
500ml dairy full cream,( olpers,milk pack, any type )
3 tablespoon candrel powder,
2 tablespoon instant Pudding mix (preferably caramel flavor otherwise any flavor will be work)
1/3 cup milk at room temperature,
2 half rolls Marrie Biscuit,
Butter for greasing.

Directions:
Whipped the cream with candrel powder, on the other hand mix instant pudding mix with the milk and whipp with the hand whisker to Combine completely. Now add this milk and pudding mixtre in 2 to 3 batches in the whipping cream and fold it with spatula to mix completely.
Now grease the pan (or the dish in which you will make the desert) with butter and put marrie biscuit layer on bottom of the dish, now pour the cream mixture and again layer the marrie biscuit and again pour cream mixture and on top sprinkle the crushed marrie biscuit and here is your creamy marrie delight is ready....
Chill it in fridge for 6 hours before serving...

Nutella Swiss Meringue Butter cream

 Swiss Meringue Butter cream is normally known as the hardest thing to make for a beginner in baking due to its failure rate.Today I will share some tips and tricks with you guys to make it easy and accurate with perfect silky and smooth texture.

Tips:
1: Egg whites should be at room temperature.
2: Butter should be at room temperature but slightly COOL not COLD.
3: After whipping the egg whites it should be rest in fridge for half an hour before adding butter.
4: At first it will look like that butter and eggwhites get sepesrted  but DON'T PANIC and continue to beat on medium speed until it comes back with silky and smooth texture.


Ingredients:
5 large size egg whites,
450 gm butter,
1-1/2 cups granulated sugar,
1/2 cup Nutella,
5 tablespoons Coco powder,

Directions:
Pour egg whites in a bowl and add sugar in it. Then put the bowl on double boiler and whisk the egg whites and sugar with a hand whisker continoiusly on low flame. This will continue until sugar gets disolves, for that check the egg whites with fingers that sugar gets dissolve completely. (Here we only have to dissolve the sugar in eggwhites, not to cook the eggwhites ). After that remove the bowl from double boiler and beat the egg whites first on low speed until it gets foamy in texture then increase the speed and beat the egg whites until stiff peaks form. Wrap the bowl of whipped egg whites with cleing plastic wrap and chill in the fridge for half an hour. Now add the butter ( butter should be at room temperature and slightly cool not cold) in 4 to 5 batches while beat on medium spead. At first it will look like that it gets curdle and separate butter and egg whites but don't take off the beater and continue to beat the eggewhites and butter for 10 minutes on medium speed. Then it will come back with a smooth and silky texture, at that time you can add any flavor like vanilla, strawberry, chocolate, nutella. Here we will add nutella and coco powder and again beat for good 5 minutes.
And Voilaaa .... your Silky and smooth Swiss meringue butter cream is ready to frost the cake or cupcake.

Chicken Pattie with Frozen Paratha


Today I've tried this yummy chicken Pattie with frozen paratha...and it turned out really amazing.. Basically this is a quickest and yummiest treat for every one.. because sometime most of us are out of puff pastry and for that you have to substitute puff pastry with frozen paratha...

Ingredients:
4 Frozen parathas

For chicken filling:

Boneless chicken 250gm,
Soya sauce 1 tablespoon,
Ketchup 1 tablespoon,
Salt as per taste,
Black pepper 1 teaspoon,
Musturd paste 1 teaspoon,
Oil 1 tablespoon,
Egg 1( for egg wash)
Cheese slices 3 to 4

Directions:
 Marinate chicken with soya sauce, salt, pepper, mustard paste, ketchup and let it sit for half an hour. After that in a pan heat the oil and cook chicken for 10 minutes or until it gets tender.

Now come to the filling part:

Cut half frozen paratha and make 2 Pattie from 1 in triangle shape. Fill the Pattie with chicken and put some cheese slice over it and close the Pattie with fork or with fingers by pressing the sides.
Now egg wash all patties and bake them for 10 to 15 mins or until it gets golden top.

Cinnamon Rolls


These cinnamon rolls are heavenly delicious.. you can make them for breakfast, or as an evevnig snack with the great result in taste.

Cinnamon Roll:
Ingrediants:

2.5 cups all purpose flour,
1 egg,
20gm Yeast,
3 tablespoon sugar,
1 teaspoon salt,
1.5 teaspoon cinnamon powder,
100gm Butter,
3 tablespoon oil,
1/2 cup Brown sugar,
Luke warm milk for mixing.

Cinnamon vanilla topping Recipe:
4 tablespoons butter,
1/2cup icing sugar,
1 teaspoon vanilla  Essence, 
3 tablespoons milk

Directions:

Sieve flour, yeast, sugar, and salt together, then add egg, oil, milk and mix well to form a dough. Knead the  dough by rolling and folding for good 10 minutes until it becomes smooth and glossy. Put the dough in a butter grease bowl and cover it and rest it for 1 hour to be double in size.
Now take the dough out and flat it with your Palm,  sprinkle some flour and roll the dough in 1 inch thickness in rectangle shape.  Mix brown sugar with cinnamon powder. Grease the dough surface with butter and and sprinkle mixed Brown sugar, cinnamon powder on the butter surface. Then roll the dough right from one side to another so that it will looks like a roll. Now cut the roll in pinwheel shapes and put them in greased pan and let them rest for another good half an hour then bake them in a pre heated oven for 25 to 30 min or until it becomes golden in color.
Now make vanilla topping for cinnamon roll, you have to blend butter, vanilla, icing sugar, and milk together and pour on cinnamon roll. You can choose different toppings for your cinnamon roll as per your taste.

Gulab Jamun ( a traditional sweet )

Gulab Jamun ( a traditional Sweet )

Recipe:

Ingrediants:

1 cup dry milk powder,
2 Tablespoon all purpose flour,
A pinch baking soda,
A pinch salt,
1 teaspoon butter,
Buttermilk for mixing.

Sheera:
2 cups sugar,
2.5 cups water,
Some cardamom,
Some zafran.

Butter Milk :
1/2 cup Milk
1 teaspoon vinegar / or
Half  lemon.
Add both ingrediants and rest for 1 minute and your butter milk is ready. Use butter milk as required.

Directions :

Mix milk powder, baking soda, salt, and all purpose flour with a hand whisker. Now add butter and butter milk to make a smooth dough.. you can sprinkle some all purpose flour when kneading.. knead until it become smooth and shiny. Now make small balls with grease hands, then cover them and let them rest for half an hour.

Heat the oil with medium flame then fry these gulab jamuns on low flame until it comes out golden in color. Immediately pour all gulab jamuns in sheera and bring one boil on stove then turn the flame off and soak them in hot Sheera and letting them rest for 2 hours.

 Note: any sweet doesn't  cook on high  flame

Delicious Jalebi ( a traditional sweet)




I made this traditional Sweet called "Jalebi" for the very first time and it came out really good.. some friends have asking me for recipe, so here you go...

Recipe of Jalebi:

Ingredients :

Jalebi batter:

2 cups all purpose flour, 3 tablespoon yogurt, pinch baking soda, 1 teaspoon baking powder, pinch salt, 1 teaspoon food color, water for mixing

Sheera :

2 cup sugar , 1 cup water, some cardamom,  some zafran

Directions:

Mix flour, baking powder, baking soda, salt, and food color with a hand whisker, then add yogurt and water and mix well.. let this batter for resting for some time, mean while you can make Sheera for this. For sheera you have to cook sugar, water, cardamom,and zafran for 10 mintues or until it gets thick and looks like sheera, then remove form heat. After the sheera will be done, pour the batter in piping bag and pipe the jalebis in meduim hot oil... You can fry jalebi and immediately soak them in hot sheera for both sides.

Note: Jalebi batter should not be too thick or too thin..... it should be in right consistency for better result...

No bake chocolate eclair cake

This the easiest and yummiest recipe ever...

Ingredients:
Oreo cookies : 2 big packs,
Cream caramel instant pudding : 30 gm,
Milk: 150ml,
Fresh cream 400 ml

Icing sugar 3 tablespoon
Cooking chocolate: 200 gm,

100 ml fresh cream.

Directions:

First whip the cream with icing sugar until stiff peaks form then in another bowl mix milk with pudding by hand beater then slowly add this mixture with whipping cream by spatula. Now grease the square dish with butter or cake pan which is used in cheese cakes..

No crushing required of oreo cookies only seprate in netween cookies then spread the layer of oreos.

Then spread one layer of Oreo cookies then pour whipping cream layer then again Oreo cookies then again whipping cream layer and finally Oreo cookies layer . Melt cooking chocolate on other side and add frrsh crram 100 ml in melting chocolatr and whisk well then pour over the Oreo layer on top  if u want sprinkle some chocolate chips for decoration..and freeze for 5 to 6 hours and serve chill...

Strawberry whipped cream cake..

This is the divine fresh cream cake and its sponge get melt in your mouth when u eat it ...
This is our traditionally fresh cream cake which u are buying from bakeries but now the recipe of this divine cream cake is in front of u ....

so try it out and avail the freshness of this cake.... :)

Ingredients:

1 cup all purpose flour,
1/2 teaspoon baking powder,
3/4 cup Luke warm milk,
1 teaspoon vanilla essence,
3 eggs,
3/4 cup caster sugar,
50 grams butter,
Pinch salt,
Cocktail syrup.

Frosting:
400 ml fresh cream,
3 table spoon icing sugar,
Fresh strawberries 1 pack.

Directions:

Sift dry ingredients that is flour, baking powder, and slat, and set aside, now separate egg yolk from egg whites then beat butter until fluffy now add more than half amount of sugar and  egg yolks  beat again then add milk in it and beat well. Now mix dry ingredients in egg yolk mixture in three batches and mix well in each Bach. On other hand beat egg whites until foamy then add remaining sugar and again beat until soft peaks form. Next u have to put egg whites in egg yolk batter in three batches , first batch add then mix with rubber spatula then next and next but don't over mix at this stage so be careful. Now pour cake batter in greased 7"inch cake pan and after pouring tap the cake pan on slab to get rid of any air pockets and bake for 45 to 50 minutes or until skewer comes out clean from cake...

For frosting:

Whip cream until soft peaks form then add icing sugar and beat for a while .

Assembling the cake:

Cut cake in between  and spread some cocktail syrup over the sponge to get it moist in same manner u have to spread this syrup on other tier too. Now spread whipped cream over it and spread some strawberries in small pieces then sandwich the cake with other tier now frost the whole cake with whipped cream and decorate with fresh strawberries as u want...
And here your cake is ready but chill the cake 3,4 hours before serving...

Chocolate cake Alaska..

This is most chocollicious cake I have ever eat ...
This is chocolate lover's cake for any occasion and party...<3

Ingredients:

1 cup all purpose flour,
1 teaspoon baking powder,
1/2 cup coco powder,
3/4 cup sugar,
1 teaspoon vanilla essence,
1 cup milk,
1/4 cup water,
100 gm butter,
3 eggs,
Chocolate chips 1 pack.

Directions:

Sift all dry ingredients and set aside, now separate egg yolks and egg whites . Then beat butter until fluffy then add 3/4 amount of sugar in it and beat well now add vanilla , milk and water and beat in every addition. Now add sifted flour in egg yolks in three batches and beat by hand each time but don't over beat.
Now beat egg whites until foamy then add remaining sugar and beat well until stiff peaks form now add this egg whites in egg yolk batter mixture in three batches and mix with rubber spatula each time but don't over mix at this stage .  Now tap this bowl on slab for two times to get rid of air pockets.
Bake this batter in 7"inch cake pan for 45 to50 minutes or until skewer comes out clean.

For whipped cream frosting:

400 ml fresh cream ,
2 tablespoon icing sugar,
Cooking chocolate 2 tablespoon.

For ganache :

200 gm chocolate,
100 gm fresh cream.

For decorations:
Chocolate curls.

Directions:

Whipped cream and add icing sugar and again whipped until stiff peaks form then add melting chocolate and mix with rubber spatula.

For ganache melt chocolate under simmering water then add cream and leave it for few minutes then stir and leave it for coming in spreadable consistency stir I'm between.

For assembling:

Cut cake in two layers then spread whipped cream on it and spread chocolate chips over it and sandwich it with other cake layer and again spread whipped cream on whole cake now finally pour gancahe over the cake and pipe the whipped cream on top of cake and take chocolate curls and spread around the sides of the cake...
And tadaaaa... Your chocolate cake Alaska is ready...

Naan khatai ... Traditional cookies..


Ingredients:

2 cups all purpose flour,
2 tablespoon semolina,
1/2 teaspoon baking soda,
1/2 teaspoon baking powder,
2/3 cup granulated sugar,
2/3 cup ghee, two tablespooon extra if needed.

1teaspoon ground cardamom,

1 tablespoon poppy seeds,
1 egg for glaze.

Directions:

Sift flour , baking soda, baking powder , ground cardamom and sieve it twice.
Now beat ghee with sugar and then add flour in it and mix well at time it will look like bread crumbs then  make a soft dough by hand.  Make cookie with your hand and press little in center with your thumb and glaze each cookie with egg wash and then sprinkle some poppy seeds or you can sprinkle roasted almonds and pistachio and bake for 12 to 15 minutes until it gets golden colour ...

Homemade cream cheese ...


Well I had been looking for a long time for cream cheese recipe but I did not satisfied with anyone and quite some time back I have found this recipe and did minor changes and it came out well , so here I am going to share this recipe with all of you....

Ingredients:

Full fat milk 1 litre ,
Vinegar 3 tablespoon ,
5 tablespoon Yogurt (in thick consistency) ,
Ice cubes few,
Muslin cloth or cheese cloth.

Directions:

Boil milk and when it comes to boil keep low flame and and add vinegar and stir then milk gets curdle when all milk got curdled then take from stove and add ice cubes and leave it for few seconds. Now line the strainer with muslin cloth and put curdle milk in it and take off all whey from milk now blend this curdle milk with yogurt until smooth then again line strainer with double muslin cloth and put this smooth cream cheese in it and cover it and refrigerate it for over night. Now your creamy cream cheese is ready...
Note: if your cream cheese looks too thick while blending with yogurt then add more yogurt and blend well.

Molten lava cup cakes...


Ingredients:

175 gm  chocolate
1/2 cup flour,
3 eggs ,
100 gm butter,
1/2 cup sugar.

Directions:

Beat butter with sugar until fluffy set aside, then melt chocolate and add eggs one at a time and beat well until incorporated. Now mix butter batter with chocolate batter and beat well then finally add sifted flour in batter and mix until all incorporated. Grease cake pans and line with paper cups and spray paper cups  with oil then pour batter and bake for 10 to 15 minutes and take them out and invert in serving plates and enjoy....


Note: sides of cup cakes are firm but centre will be wobbly.

Zinger burger...

For buns recipe you have to look at other post in this blog...:)

Ingredients for zinger chicken:

1/2 kg chicken breast pieces,
Salt as per taste,
2 teaspoon White pepper,
1 tablespoon vinegar,
1 teaspoon ginger crushed,
1 teaspoon paprika powder,
Oil for frying.

For coating chicken:

1/2 kg All purpose flour,
1 teaspoon salt,
1 teaspoon white pepper,
1 teaspoon baking powder,
Chilled water.

Directions:
Marinate chicken with ingredients and leave it for at least 3 to 4 hours then mix all coating ingredients with flour and sift well. Now take each chicken breast piece and fold in flour and pressed by your hands in flour then dip in chilled water for few seconds and then again dip in flour and pressed chicken by your hand like we pressed qoftas to get a ball...
Then fry them on low flame until it got golden colour.....

Burger buns ...

Ingredients :

2 cups flour,
1 teaspoon yeast,
1 egg,
2 teaspoon sugar,
1 teaspoon salt,
1 tablespoon oil,
40 gm butter,
1/4 cup milk ,
Water for mixing,
1 egg for glaze,
1 tablespoon sesame seeds.

Directions:

Add yeast, sugar, salt,  in flour and sieve then add egg, milk, oil and mix all dough with water as per need. Leave it for 20 minutes, then knead the dough for ten minutes by rolling and folding then add butter and again knead for ten minutes more by rolling and folding until it become like soft and smooth look. Now make a ball of the dough and leave it for an hour and spray some water over it. After that take out the dough and flap it by your hand and make equal quantity portions  , now take each one and first roll and then make a round buns of each. Line a baking tray and put all buns in the tray and spray some water and leave it for 30 to 40 minutes until it got rise now glaze with egg wash and sprinkle some sesame seeds and bake for 15 to 20 minutes or until it becomes golden.....

Fererro rocher cup cakes...

Ingredients:

1 -1/3 cup flour,
1 cup sugar,
1/3 cup coco powder,
1 teaspoon baking powder,
1/2 cup mayonnaise,
3/4 cup water,
1 teaspoon baking soda,
1 teaspoon vanilla essence.

Ingredients for frosting:

100 gm dark chocolate ,
100 gm white chocolate,
100 gm whipped cream.

Directions:

Sift flour, coco powder, baking powder, and baking soda that they are mixed well. Now add sugar in mayonnaise and beat well that all are incorporated. Then add vanilla and mix again, now add 1/3 flour with mayonnaise batter and mix until all incorporate then add 1/2 water and mix well , in this manner add remaining flour and water in total 3 batches and mix well that all are incorporated. Now preheat oven and bake cup cakes for 15 to 20 minutes and then leave for being at room temperature.

Directions for frosting:

Cut out the chocolates and boil cream then add in cutted chocolate and mix well now leave it for hours to be  reach  the desire consistency.... Now frost the cup cakes and decorate with fererro rocher chocolate....

Chocolate cake with cream frosting and lace collor

Ingredients:

2 cup flour,
2 eggs,
2 cup granulated sugar,
1/2 cup oil,

2 teaspoon baking powder,

1 cup buttermilk,

3/4 cup Luke warm water
1/3 cup coco powder,
1 teaspoon vanilla essence,
Pinch salt.

For  frosting:
600 ml fresh cream,
4 tablespoon icing sugar.

Chocolate lace collar:

100 gm chocolate,
Piping bag,
Parchment paper.

Directions:

Sift all dry ingredients and set aside then beat eggs with sugar until foamy then add vanilla, oil and buttermilk and again beat well until all incorporated. Now mix dry ingredients with wet ingredients with spatula and fold gently until all mix well. Now add hot strong coffee and mix with spatula until all combined . Grease cake pan and bake the batter at 160 degree for 35 to 40 minutes or until tooth pick comes out clean. Now invert cake on wire rack and let it cool completely.

Directions for frosting:

Whipped cream until stiff peaks foam than add icing sugar and again whipped .

Assembling the cake:

Cut cake into four layers than frost each layer with fresh cream and then frost all cake with cream.

For chocolate lace collar:

Put chocolate in piping bag than microwave it until it gets melt than pipe as your desired design on parchment paper and than wrap it around the cake and freeze for 10 minutes after that pull off the parchment paper from the cake and your chocolate lace collar is ready....

Chocolate fudge car cake


Ingredients:

1-3/4 cup flour,
2 eggs,
2 cup granulated sugar,
1/2 cup oil,

2 teaspoon baking powder,

1 cup buttermilk,

1/2 teaspoon baking soda,

1cup hot strong brewed coffee,
1/3 cup coco powder,
1 teaspoon vanilla essence,
Pinch salt.

For ganache frosting:

150 gm dark chocolate,
100 ml fresh cream.

Directions:

Sift all dry ingredients and set aside then beat eggs with sugar until foamy then add vanilla, oil and buttermilk and again beat well until all incorporated. Now mix dry ingredients with wet ingredients with spatula and fold gently until all mix well. Now add hot strong coffee and mix with spatula until all combined . Grease cake pan and bake the batter at 160 degree for 35 to 40 minutes or until tooth pick comes out clean. Now invert cake on wire rack and let it cool completely.

Directions for frosting:

Cut chocolate in pieces and put in a bowl on double boiler and add cream in it and continuously stir and when it gets completely melt then remove from boiler and let it completely cool  you can leave it for an hour to make spreadable. And when it get spreading consistency layered cake with frosting and then wrap in fondant...

For carving cake:

Cut cake in horizontal four lines than make center two lines half cut . Now put 2 center half cut pieces on cake board and than side pieces on top of center pieces than make tier with cookie cutter circle shape now frost the cake than tier and wrap in fondant....

Marshmallow Fondant


Ingredients:

100 mini marshmallows,
2 tablespoon water,
1 teaspoon corn syrup,
2 teaspoon vanilla essence,
1 teaspoon lemon juice,
8 cups icing sugar.

Directions:

Grease a bowl with oil and pour water and marshmallows in it and microwave it until it gets melt stir during microwave with grease spatula. Now add lemon juice , corn syrup, and vanilla essence and mix with grease spatula then slowly add icing sugar one cup at a time and knead it by hand  until it becomes like a dough. Then make ball of whole fondant and plastic wrap it and put in an air tight container and keep it overnight, and then use. If you want to add colour then use food colour and add in fondant and knead well with hand while all colour added though. Now use as required.
