Naan khatai ... Traditional cookies..


Ingredients:

2 cups all purpose flour,
2 tablespoon semolina,
1/2 teaspoon baking soda,
1/2 teaspoon baking powder,
2/3 cup granulated sugar,
2/3 cup ghee, two tablespooon extra if needed.

1teaspoon ground cardamom,

1 tablespoon poppy seeds,
1 egg for glaze.

Directions:

Sift flour , baking soda, baking powder , ground cardamom and sieve it twice.
Now beat ghee with sugar and then add flour in it and mix well at time it will look like bread crumbs then  make a soft dough by hand.  Make cookie with your hand and press little in center with your thumb and glaze each cookie with egg wash and then sprinkle some poppy seeds or you can sprinkle roasted almonds and pistachio and bake for 12 to 15 minutes until it gets golden colour ...

Homemade cream cheese ...


Well I had been looking for a long time for cream cheese recipe but I did not satisfied with anyone and quite some time back I have found this recipe and did minor changes and it came out well , so here I am going to share this recipe with all of you....

Ingredients:

Full fat milk 1 litre ,
Vinegar 3 tablespoon ,
5 tablespoon Yogurt (in thick consistency) ,
Ice cubes few,
Muslin cloth or cheese cloth.

Directions:

Boil milk and when it comes to boil keep low flame and and add vinegar and stir then milk gets curdle when all milk got curdled then take from stove and add ice cubes and leave it for few seconds. Now line the strainer with muslin cloth and put curdle milk in it and take off all whey from milk now blend this curdle milk with yogurt until smooth then again line strainer with double muslin cloth and put this smooth cream cheese in it and cover it and refrigerate it for over night. Now your creamy cream cheese is ready...
Note: if your cream cheese looks too thick while blending with yogurt then add more yogurt and blend well.
